Leading food scientist and Professor of Medicine at Stanford University, Dr. Christopher Gardner, believes that beyond physical well being, proper nutrition also positively impacts health care, the environment, social institutions, and animal justice. Healthy eating also disrupts a food industry currently dominated by factory farms and fast food. Recently, his nutritional interests have expanded to two new areas. The first is “stealth health,” which explores motivators other than health for making positive dietary changes, such as climate change, social justice, and animal welfare. The second is to focus on a food-systems- approach to dietary improvements that addresses the quality of food provided by schools, hospitals, worksites, food banks and other institutional food settings.
